Raging and Man Friends (WIAW)

Hey ya’ll! Wow, I haven’t blogged in a week. Shocker, but not really. I’ve been busy with school and MAN FRIENDS. Yes you heard it right here. I finally have a man friend (after being a jealous person over Kara and Britt’s man friends), but technically I’ve sort of had him for a while. Details don’t really matter. Anyways, he came over for dinner on Saturday night because he didn’t believe that healthy food can be delicious. Totally proved him wrong. Winning. Then we went to this insane concert. I fell in love…not with him, but with electro house music. Oh no she didn’t. Oh yeah, sadly after teasing it for so long, I finally have understood the magic behind it. Plus who doesn’t like sick lights to a dope beat? A crazy person probably. Plus you get to dance dance dance. Literally I couldn’t walk the next day. My body hurt so bad. Lets get to the good stuff: The fooooood.

Oh yeah, can’t believe I forgot to say thanks to Jenn for hosting my favorite day of the week. It is probably one of the main reasons I always remember to blog at least once a week. I need to get better about that.

Back to the food.
Lemon and Strawberry Heaven Pie Oats:
1 1/2 c. water
1/2 c. oats
1/8 tsp vanilla extract
1 packet truvia
1/4 c. cottage cheese
1 banana
1 tsp of Lemon pudding powder
slices of strawberries

1. Prepare oats with water in microwave for about 2:55 minutes.
2. Slice up banana into small slices then add to oat mixture and microwave for 1:15 minutes.
3. Add in vanilla, truvia, and cottage cheese.
4. Add lemon pudding powder and mix thoroughly.
5. Slice strawberries and throw into bowl.

Oh lord, this combination is so delicious. Who knew that adding a little pudding powder to your oatmeal would take it over the edge? Thank god for that discovery. The oatmeal is not overly sweet or sour, it just has a nice hint of lemon and when mixed with the strawberries it is like the perfect pairing ever. Not only is this tasty, but it is also really cheap. Pudding is like .40 cents a box. I’m going to run to the store now and load up for a lifetime. Not even kidding. I just bought butterscotch, pistachio, and chocolate. Yummmmmmy.

Speaking of pudding powder, I have discovered another lovely creation from the blog world:
Pudding in greek yogurt. Just go out, buy a huge thing of plain chobani or whatever brand you like, and add in pudding powder. This bowl here is chocolate pudding with strawberries. Can you see a trend here? Yes, I love strawberries. No, they are actually on sale right now, so the Jew in me is like MUST BUY every week until not on sale. Good deals get the best of me usually all the time. Anyways, this is such a tasty snack to have every day. I can’t wait to try out my other pudding flavors on this bad boy. Also I should probably invest in some other types of fruit. I think I’m going to go the frozen route that way I can get a variety of fruit for a cheap price. I really need to stop Jewing everything.

Mmmm my version of a burger salad. Chopped up extra lean turkey burger, sliced up pickles, onions, lots of lettuce, and top it all off with dijon mustard. So good. I love salads that are jam packed with a bunch of stuff. Especially pickles. I’m a freak about pickles. My roommate eats my pickles sometimes, and I literally want to kill her. Yes, I’m crazy. I pay for my own food, so please don’t eat it or I will turn into a bank and ask for money. Sorry. Too much drama. Can’t you tell that I’m excited to find a new apartment and live with my future roommate?

J-E-L-L-O. Jelloooooo. Totally not kosher, but when you want a low calorie snack that in my opinion tastes really good (especially with whipcream) then Jello is going to be your best friend. Make sure it is the sugar free version because I think it is actually 0 calories or something close to that. Jello should be weightlosses best friend. Beat those cravings with Jello. I should advertise for them or they should at least give me free jello packs.

Now to the dinner that shut the guy up. I used this amazing recipe from my new favorite website: Skinny Taste. Not only are all of Gina’s recipes super beautiful to look at, but they are tasty and really low calorie (also random plug, if you are doing weight watchers, she has all the points on the website for each recipe). I made the Chicken Rollatini with spinach. It turned out so amazing. I wish I would have remembered to take a picture of the dish that had all the chicken in it because it looked sooo beautiful. Anyways, I served it up with a side of spaghetti squash and gluten free rolls. Man friend was like wow this is actually good. Well obviously it is good, I made it. Also eating healthy is actually tasty, you just have to know what you are doing.

Remember how I told you I was sewing an apron? Well I actually finished it a while ago, I just forgot to post a picture of it. I made man-friend dinner in this cute little thing. I’m actually thinking about opening an Etsy account with a friend and selling them on there along with artwork and other things made by us. What do you think? Do you think people would buy these aprons? I would also do custom ones too. Let me know. I want the money, honey.

Other good news: My $200 Lulu Lemon giftcard has finally arrived (helloooo shopping), I’m going to Houston this weekend with my mom to relax from the stress of school (lezz be honest, I’m going to shop till I drop), and I have a job interview tomorrow (with a nutrition company). I’m so excited. I hope everyone is having a great week!

The BEST Party (WIAW)

Hey ya’ll! Welcome to the best day of the week, WIAW. Hosted by the one of the sweetest hosts Jenn. Today is super special for some reason. It must be the WIAW magic going on, but I have been so happy. For one, I created a tumblr. Hahaha. Yes, I’m a dork, but I really like just having a thing of pictures. Check it out or follow me, Functional Foodie. In other news, I got on the Dean’s list at school for making a 4.0. Success. Also, I’m going to be assisting my functional foods professor in research with tomatoes and broccoli on prostate cancer. Even better is that she said I could focus on the inflammation part of the research since I have arthritis and that is what I’m interested in studying in. MORE news is that I am going to apply for a research grant to start up my own research about arthritis. Oh yessssssss. Oh and I am going to apply for some scholarships and hopefully I get them. Did I mention that I won 200$ to Lulu Lemon. God I’m fantastic. Enough about me, let us get back to the real reason you came to my blog, the food.

Mmmmm. A veggie omelet for breakfast. I have been loving the switch to eating vegetarian. It actually isn’t hard, so I don’t know why more people don’t do it. The benefits outweigh the juiciness of meat. This omelet has the best melty cheese in it. I was impressed with my omelet making skills at 6:30 am. Way to go Lindsay! The omelet had green peppers, onions, mushrooms, and low fat mexican cheese. Soooo goood. Definitely the best thing to eat before going to the gym and then heading to my Food Systems and Management class.

This was the best sandwich combination EVER. First layer was PB2 peanut butter. Then on top of that was a few slices of banana. Next were a couple of sliced strawberries. To finish it off there was an organic raspberry jam. Perfection. Not only is it tasty, but it was also really filling. I’m going to have to eat this now ALL THE TIME. Must invest in some more jam because that was the last of it. I’m going to bust out this sandwich in all kind of flavors. I wonder what will be the best combo?

For dinner, it was tofu. What could I just throw together really quickly? Hmm stir fry? Yes with spicy peanut sauce? OH YES. First I chopped up all my tofu into small cubes. Yeah it made a lot of tofu. Barely fit into the pan. I sprayed the pan with some cooking spray and cooked the tofu until it was brown on all sides. I like my tofu sort of crispy.

I then threw in some broccoli and chopped onions to the mix. Cooked those for a few minutes in the pan and then added the special sauce. My sauced contained PB2, soy sauce, spicy asian sauce, ketchup, and a small amount of brown sugar. It was epic. I cooked it for a couple of more minutes and I was ready to eat. I was hoping that it wasn’t too spicy because sometimes I have problems with the asian sauce and overloading too much in the pan.

Luckily it wasn’t too spicy. Sorry for the dark picture. I was in my room watching 30 rock and realized I needed to take a picture of my plate. It was really delicious though. I definitely am going to have to actually put some real effort into perfecting this recipe, so I can share it with ya’ll. Luckily I just bought two more packages of tofu!

Dessert! Seriously the best time of the day. Why are these vitatops soooo freaking expensive because they are so delicious. I want to try more flavors, but it is impossible to find more than just the chocolate one where I am. I’m probably going to go on the hunt for some this weekend. Oh yeah. I live a real exciting life. Anyways, I had the chocolate one and topped it with sliced strawberries and whipcream. I really know how to treat myself. Oh I’m fancy huh. So good.

Anyways, I’m going to go back to celebrating my awesomeness and watch more episodes of 30 Rock!

Going down the veggie path (WIAW)

Hey ya’ll! I have finally decided to come back from my period of rest and dealing with complicated things to bring you a wonderful What I Ate Wednesday post. After reading a variety of books like the China Study, I have decided that I’m going to eat vegetarian for 4 days of the week out of 7. Another reason is because my future roommate is a vegan and I can’t wait to enjoy some amazing meals with her. Eventually I may go full veggie, but lets be honest with ourselves I really do love me some good pieces of meat. Mainly healthier cuts of meat like lean turkey, chicken (not so much anymore after watching Food Inc a million times, but still like it), and I love fish. Maybe I’ll go the pescatarian route. We shall see, but in the mean time I want to give a big thanks to Jenn from Peas and Crayons for hosting this awesome day. Seriously it brought me out of my sad funk.

Get this party stared on a Thursday morning….yes I rewrite songs.

I have no idea what my images are being stupid right now, but for some reason my breakfast wants to be sideways. For my first day as a vegetarian, I had cinnamon burst cheerios, banana slices, blueberries, and almond milk. I actually was going to have oatmeal, but I woke up so late that I did not have time to prepare it to my high standards. I was going to be late to class, so I opened my cupboard and was like oh thank god I bought some cereal the other day. Good buy for once at the grocery store (unlike the bag of chocolate chips and marshmallows that I decided I needed).

Okay, so I guess all my photos will be crooked. Oh well. That is me. For lunch I decided that I wanted some brunch. Actually I was at my mom’s for an infusion treatment that I had to go to later in the day, so all she really had to eat was eggs. I made an egg white omelet with tons of veggies. It had mushrooms, tomatoes, onions, and peppers. Yummmy. Oh and obviously cheese because truth be told cheese is the best food in the entire world (besides candy). The omelet was tasty and very filling, so my stomach survived my 2 and a half hour infusion treatment. Success.

For dinner, I picked up my younger brother and a friend of mine and then we met another one of my friends at this amazing Thai restaurant in Austin called Titayas. Isn’t the name fab? I love making jokes about how I’m going to be getting some titties or how I want tits. They should really just change their name to Tits. Yes, I have the humor of a 13 year old boy. Anyways, after waiting for 30 minutes for a table, we sat down and ordered appetizers. My brother and I split an order of mushrooms. Best choice. They were lightly battered and topped with a sweety and spicy thai sauce. It was a great combination with the simple taste of mushrooms.

For my entree, I decided on yellow curry with tofu. I’m going to be honest here and tell you that I have been craving curry and tofu for weeks now, so I actually already knew what I was going to order before we even got there. It was a good choice because the curry was more sweet and not as spicy as expecting. I love spicy things, but curry can be way too spicy and make you sweat. My brother for example. He ordered a green curry and holy heck it was so spicy. My eyes watered when I sampled it and he was sweating to death in the restaurant. That was actually funny though. He makes me laugh. My two friends both ordered chicken pad thai without bean sprouts. It was cute because they are actually roommates and I was like no wonder they get along so well, they like the same things. It was a great meal with good company.

Cake balls are the best dessert to have after an amazing day. Really though. These especially. I had a cake ball at Starbucks over break that was peppermint brownie. So good. I decided that I could recreate this (especially with my new pan) and not have to shell out a ridic amount of money for one stupid cake ball. Another point for Lindsay. They turned out so good. I made a batch of brownies and let them undercook a little, so they were super gooey. I rolled them into balls and stuck lollipop sticks into them then placed them in the freezer for a little while. I then rolled them in melted white chocolate bark and then quickly sprinkled them with crushed peppermints. These were a big success. Everyone loves them. I’m going to have to start creating crazy cake balls.

I’m going to end the day with a laugh. I saw this shirt at Walmart in Missouri while I was there for my grandpa’s funeral service. In such a dark time, this shirt brought some joy to my life, so hopefully it will make ya’ll laugh. Surprise. I bought one. It is green with a huge cat’s face on it. I wear it around my apartment. It is pretty epic, not gonna lie.

Going for a Holy Party (WIAW)

Hey ya’ll! As most of you know, I am on my flight to Israel right now, but I wanted to do something creative for Wednesday because it is my favorite holiday after all. What I ate Wednesday. So I thought long and hard about what I could do for this special day traveling to a special place, and it hit me. I’m going to do a What I Will Eat in Israel Wednesday to celebrate my epic journey to the holy land. Every week we have to give it up to Jenn for creating and hosting such a wonderful weekly event.

Now, what kind of diet to Israeli’s eat? Well a good one, at least I think based on my best friends pictures that went on the trip a couple of years ago.

I stole this from my friend, but it’s all good. Facebook is meant for stalking. Anyways, one of the days we are there, we get to go to the largest open air food market in Israel. I know Israel is a small place, but they love their markets, so this is pretty impressive. Pretty much this is going to be dried fruit heaven. My brother and I have already planned to pretty much eat dried fruit as our lunch that day because it is one of our favorite snacks. This is only half of the dried fruit stand too. It is extremely large, which is good because it will offer tons of variety in case someone may not like a certain fruit. I can’t wait. Hello to gaining a few pounds from dried fruit. Nothing to complain about since it will be tasty and in my belly.

If there is one thing and one thing only that I remember from years of Hebrew school is that Israel has the best falafel known to mankind. How do I know this? My Hebrew school teacher, who I had for 4 years, lived in Israel and made falafel from scratch. I wasn’t quite a fan of hers, but I can’t wait to sample the goodness that is awaiting me in the holy land. Yes, I will probably eat some gluten on this trip, and do I really care no? Should I? Maybe, just because we are sleeping in a desert one night and I really don’t want to have stomach issues out there. Oh well. I’ll just not eat falafel that day. Random fact of the day: apparently there is a war on falafel and Israel is being sued by Lebanon. Oh those silly people, it is freaking falafel, get over it.

Hooo-muhs. Yes, some of the people on the trip try to say it like they are Israeli. Ummm hello, I don’t know if you have looked in the mirror lately, but you are white and from America, so just say it like a normal person because you are not being cool. Enough complaining, I will be enjoying tons and tons of hummus. I will dip veggies in it. Actually I’ll probably just eat it by the spoonful because it will be so much better than any hummus I have eaten before and trust me I eat pretty good hummus.

Oh la la la Bamba (in case you can’t read Hebrew). It is a popular snack in Israel and to make it even better it is gluten-free! Success. It is a peanut butter flavored corn snack. It comes in a variety of flavors too like chocolate, strawberry, and banana flavored. I can’t wait to try this. One of the chaperones on the trip is gluten-free and she says this is one of the best snacks out there. Mainly non-gluten free people eat it because it is just so good. I’ll probably end up taking half of my suitcase up just with bags of this, so I can enjoy it back in Texas.

Frozen Yogurt in Israel. Oh heck yeah I’m getting on that train. From previous out of the country experiences, I feel as if yogurt and icecream are just a million times better than what it is in the United States. Probably because they use more natural ingredients and it isn’t as processed as the stuff we consume in America. My friend said that this was super delicious, so I probably will be eating as much as my body can handle. Who needs to eat actual meals, when you can eat scrumptious frozen yogurt like this?

I’ll have to thank my friend for letting me steal all her pictures, but doesn’t this look good? It will totally be worth eating gluten for. Hopefully I will get some of this, if not I probably will still be eating a delicious lunch. Not only does it look tasty, but for the main part the food in Israel is pretty healthy. What is with everyone else, but the United States huh? So unfair, but as long as you eat smart you can still eat delicious food.

Back to the Party (WIAW)

Hey ya’ll! It is my favorite day of the week. I always consider it a little holiday because many bloggers take a break from their normal routine and post up an awesome spread of their eats. Best stalking site ever. Seriously, how do you think I found most of ya’ll? We have to give a big thanks to Jenn for hosting this weekly party. I seriously do not know what some bloggers would do without her. Enough talking, lets get to the good stuff: the eats.

PB&J Oatmeal (Gluten Free)

1/3 c gluten free oats
1 1/3 c of water
1 banana
2 tbsp organic raspberry preserves (or any jam/jelly of your choice)
2 tbsp PB2
1 packet of truvia
1 tsp of vanilla

1. Make oats the night before, using normal method.
2. Next morning, slice up 1 banana, place on top of oats, and microwave for about 2:50
3. Stir up everything until banana is “melted” in oats
4. Add in vanilla and truvia packet
5. Then swirl around one tablespoon of preserves at a time
6. Top with PB2 and you are ready to enjoy

I love peanut butter. I love jelly. I’m not really a fan of the sandwiches unless they are made just right, but I thought why not try this classic combination in one of my bowls of oats. I have the best ideas. The natural sweetness from the raspberry preserves made a perfect combination with the saltiness of the peanut butter. Next time I am going to through in some actual raspberries to make the meal even better than it already is.

Yes, for once I actually recorded some of my snacks. Lets not get ahead of ourselves because I did not manage to catch everything. I may have missed a cheesestick or two, but I’m trying here. I want to live up to the WIAW greatness.
I’m being a typical Jew when it comes to my grocery shopping lately, but I buy so much produce that I have to hit up the deals otherwise I will be dropping mega wads of cash all the time on fruit. Right now, Rome apples are on sale. Rome you say? Well, unfortunately the apple does not bring back memories of a warm summer day strolling through the Roman forum while ingesting coconut gelato, but I’m not going to complain because it is still a really tasty apple. I try to eat an apple a day; however, it definitely does not keep the doctor away because I have been having some arthritic pain lately.

Thanks to my school I have made one of the best discoveries. Okay, technically I did not discover it since they came to lecture about their company, but hey I did go out and try it on my own. Welcome to My Fit Foods. The company has pre-packaged healthy meals (with all of the nutrition information on a label) for each meal of the day. They serve vegan, vegetarian, and gluten free products. It is amazing. I went in this past week when they were having a 40% off sale and got two meals to try for the price of one. Jew heaven. This is the Salmon stir-fry, and it was so delicious. There was a wide variety of vegetables with a nice side of rice and a good chunk of salmon with a spicy rub on top. What a perfect lunch time meal.

Yes, I eat green beans out of a can and I like it. No, I love them. I may be weird, but I don’t really care. I’m getting my servings of vegetables, so who cares where they are coming from. That is a lot more than I can say for most people in America. Don’t be hating on my can veggie loving.

One of the best gluten-free snacks out there. Rice pudding. These little snack packs are the perfect sweet treat to hold you over for a while. Topped with fat free cool whip to make pure perfection. Also I have a kerropi spoon that I got from this guy that worked at yogurtland. Thanks for all the free spoons. Now eating my pudding is so much more fun. I think Katie would approve, especially because I have Hello Kitty, Chococat, and My Melody.

Turkey Meatballs with Spaghetti Squash (Gluten Free)
1 lb extra lean ground turkey meat
1 diced onion
2 egg whites (I used egg white substitutes)
1/2 c. gluten free oats
1/8 tsp oregano
1/2 tsp garlic powder
1/4 tsp salt
1/4 c. fat-free milk

1. Turn on oven to 400 degrees, coat baking sheet with spray or use a piece of aluminum foil
2. In a bowl, mix egg whites, oats, and milk until combined
3. Add oregano, onion, garlic powder, and salt and mix.
4. Mix in turkey meat until all into a solid mass
5. Makes about 32 meatballs, roll with your hands, and place on baking sheet
6. Bake for about 10-12 minutes

I placed my meatballs on spaghetti squash. I know ya’ll are probably sick of seeing spaghetti squash, but I bought two of them and I just used up my second one. I can’t help it that I’m a little obsessed with this low calorie pasta substitute. I know nothing will replace the doughy taste of fresh pasta (trust me because I have eaten pasta all throughout Italy), but for those who are health conscious this is a pretty good sub. The meatballs had a great flavor from the oregano and garlic powder and went well with the squash. I’ll be eating these leftovers for a while.

I’m ending my day with a nice cup of hot cocoa, marshmallows, fat free cool whip, and some sprinkles. I feel like sprinkles makes everything better or at least prettier. This hot drink is soothing my throat, which is randomly sore, and making studying for my anatomy exam a little better. Although studying for anatomy, not really fun, ever. Luckily I’m a whiz when it comes to that stuff otherwise I would be screwed like 95% of the class. Three points for being smart.

Of course I’m going to leave ya’ll with a little fashion. This is sort of my low-key look. Yeah I know, low key, haha this is still dressing up for most people that go to school where I do. I just will never get into the lazy look. Its just not me. Anyways the top is forever21, pants are macys, boots are DSW, and scarf is JcPenneys. I paired it with a black leather jacket from Urban Outfitters for when I went to class.

A Little Too Late (WIAW#2)

Hey Ya’ll. I’M ALIVE. I feel so bad that I have neglected my audience and my blog, but I have been crazy busy. I survived my green tea research paper. Really I told it who was boss. Okay, I should stop lying to myself to make me feel better, but I think I did better than most people in my class, so it’s all good in the hood. I don’t have a lot of school work for the next few weeks, so ya’ll are stuck with me. I know, exciting right? I’m coming a little too late, as JoJo would say, to the What I ate Wednesday Party hosted by the lovely Jenn, but hell its WIAW I start the party when I want to. So here were my eats and what my day was like today:

6:20: Wake up call. Every morning I wake up to Jay-Z. I feel like the luckiest woman in the world until I realize that I’m not Beyonce and I’m actually white. Story of my life.

6:25-40: Hope in the shower. Have a small American Idol sesh. Obviously I am the winner. I am the best diva out there. Rachel Berry can eat her heart out because I’d kick her butt in a diva off. I think I may still be in the dream state at this time…

6:50: Make interesting food in Tupperware. What is that? It was the most amazing creation EVER inspired by Angela. Now she is amazing. If I didn’t have to go to school and actually live a life, I would seriously just live in the kitchen making all of her recipes.

 1. Cook oats the normal method I have always been using
2. Add into the oats fat free cocoa, GF chocolate chips, and frozen cherries (dethawed/microwaved in oats)
3. Mix a 1/2 cup or more of frozen cherries and a frozen banana in the blender.
4. Pour half of oats in a bowl, then layer soft serve, then more oats and more chocolate chips.

7:30: Trudge to class. Oh god I should be honest, I’m so lazy that I walk to class. I have Food Science on MW from 8-920 am. I do trudge, but just from my car to the classroom. I’m a morning person, but I really just don’t like going to class.

8-920: Oh Food Science. What would I do without you? Hmmm probably sleep late. We have quizzes every day, but they are pretty easy. I mean it is NBD when you are as intelligent as I am. There she goes again being her conceited self…HEY! I do have the right to brag every once and a while, esp since I’ve gotten above 95s on all my exams. Anyways, Food Science is the best class ever. I really get to think about things…like when the boy I like will finally realize that I’m the one for him or what craft project I’m going to do next. It’s some real prime A thinking time.

925: Today was special. I got to go home. I know exciting right? Oh, but not really. I had an emergency appointment with my rheumatologist because my arthritis had a really bad flare up over the weekend. I hopped in my car after class, turned on the radio, Super Bass came on, and I busted out a celebratory dance move.

950: My mom plays on a team at a bowling alley, so I went over to meet with her. I chatted up a storm. People are probably like why doesn’t this girl ever shut up, we come here to bowl, not to listen to some dramatic white girl go on about how tough life is. My mom even bought me a glass of iced tea, so I would have something to occupy my mouth with and be quiet.

1140: We needed a quick lunch before my doctors appointment, so I went to pick up Vietnamese from our favorite place in the world: TAM’S DELI! Yeah I really do go there like once a week. It is gluten free friendly and the food is so legit, plus the owner loves us. I had shrimp spring rolls and a vermicelli bowl. So good. I’m re-using a picture from last week:

1230: Catch up on Glee. OMG. WTF. I love this show. The third season is turning out to be amazing, at least in my opinion. Britney S. Pearce. I mean come on, how can you go wrong with having a unicorn for class president. Plus Santana, DAMN I love her. This season is filled with so many twists, it is mind blowing. Obsessed.

1:30: The dreaded doctors appointment. This weekend I woke up and could not move my wrists at all. Seriously, I was in so much pain that it took me 10 minutes to put my clothes on. I was an 85 year old in a 21 yr olds body. Is this real life? Oh yeah, the joys of being me. My doctor took one look at my wrists and saddle joint in my thumb, and just was like yeah it is bad. Like I couldn’t tell? Anyways, she has increased my medicine (I’ll go into detail about my arthritis in tomorrows post).

5:00: FINALLY. That was the longest appointment of my life. Did they not get the notice that I wanted to go to DSW? Girl over here need her some shoes like now. What did the world do before DSW? I seriously have no idea because it is heaven to the shoe addicted girl. I’m like a fat kid going into a candy store, I have an explosion inside from the excitement and then I run around like a chicken with my head cut off. It is a great site to see. Usually the workers just let me be because I’m insane. It wouldn’t let me upload a photo, but I want these in PINK.

6:00: Eat some din din with mi madre. Salmon with raspberry glaze. Can it get any better? Yes, we could have actually gone to a seafood place, but that would have meant that we would need to spend money. Def pulled the Jew card out on that one.

6:30: BTW Did I mention that because I’m crippled and had to go to an emergency infusion treatment that I got to skip my other two classes of the day? Oh yeah, I did. It was awesome. I love nutrition, but I hate sitting around stupid people. Anyways, I went to the UT volleyball game. I love volleyball. I love the Longhorns. I love Texas. End of story. The team is amazing. It was packed because it was a rivalry game against Texas A&M. Oh those aggies…(my older brother was one), but they think they can compete in sports. I think they live in their own candyland. Whatever floats their boat.

After the game, I went back to my apartment and here I am. Writing this semi-lame post. I need my mojo back. Maybe they sell some special berries at HEB to help revive your soul after it was destroyed by writing and research. I should look into that or maybe I’ll just invent some type of food myself. I’m exhausted, so I’m out. Hope ya’ll had a fab WIAW and that I didn’t bore you to death because I think I just bored myself to sleep. Lies. I’m an old grandma and it is waaaaaay past my bedtime.

Going stag (WIAW 1)

I just figured ya’ll were probably all depressed inside because I didn’t post yesterday. More like ya’ll were probably like yes the bat sh!t crazy chick has left the blogosphere. I have just been studying like a mad person. It has totally paid off though. I rocked my Food Science exam, and I have my Anatomy Lab practical later and I feel good about it. Today is a right of passage. No longer will I be a young girl, but I will become a woman. I am about to enter the greatest of day of the week. What I ate Wednesday! I have been stalking blogs for month on the lovely Jenn’s blog. It’s like food-gasm central. Who needs porn when you have WIAW. Not only am I going to join the party, but I’m also going to tell you the hilarious, ridiculous reasons why I’m single. Get it gurrrl.

Reason’s why the fabulous, yet neurotic Lindsay is single (this is more of just a joke, so please don’t be offended):

1. I don’t “rage” or “frat-hard”. Who says frat-hard? All I know is that it’s not me. Frats were fun when you were a senior in high school or even a freshman in college, but I feel more like a pedophile these days. The last time I was at a frat party I was 20 (that is young), but damn everyone there looked about 16, besides the people I went with. Frats at age 20 and above are only good for onething: free booze before you go out to bars, esp if your a cheap Jew like me.

Pumpkin Pie oats for breakfast. So delicious. Only thing I did different was microwave a banana in with the oats before adding all the goods. Best brain food ever. I can attribute my good exam scores to this bowl of wonderfulness.

  2. I always tend to pick the wrong guy. Drives a motorcycle, but doesn’t have a drivers license. Doesn’t that sound like a real winner to you? Or lives at home with mom and jobless? Oh yeah, definitely a keeper. I feel like the more messed up the situation, the more I like the guy. I think I was dropped on my head as a kid…

3. I have the habit of talking someone’s ear off. Not only is it uninteresting things, but my conversations also always verge on the edge of creepily personal information. Poor kid on my floor freshman year. I used to go in his room and torture him for an hour or so about my life story. I think maybe one day I should learn how to respect people’s limits. Prob not. Although he must be used to it because apparently we were good friends.

4. Dub-step. Enough said. No really though, I just don’t see the appeal. I don’t like it, and most people my age do. Apparently you can’t be date-able if you don’t like dub-step. What is the point of listening to a type of music that is only good when you are on ecstasy and wearing..lets just say..interesting outfits? My generation confuses me.

Home made chicken spring rolls. Recipe will be up later on this week. Haven't decided if I should do a video tutorial or just write out the recipe.

5. I post unflattering photos of myself. Does this bother me? No, but guys minds are on a few things: BBB. Boobs, Butt, and if you have a butter face or not. I forgot to mention this in my post the other day, but I just realized my gravatar image is me when I am running a 103 fever and have a crazy rash. Am I going to change it? No. It’s me in my natural state. Well more like me vs nature.

 6. I wear something besides Nike running shorts and ratty t-shirts. Is this style trending? It sure has in Texas. Just another thing I don’t get. Are these girls working out in class? I’m not really sure. Maybe they just don’t want to put normal underwear on, so they are lazy and wear Nike shorts. I should do that, but I’m even lazier and go commando instead.

7. Besides creepy personal facts, all I talk about is food. I mean I am Jewish. It is the only other thing we know besides money. You think I’m exaggerating. No, I’m not. Come to any family event or meal, and all we talk about is how good the shpread was at so-in-so’s Bar Mitzvah or how Mitzy Schtilberstein burnt the challah. Food is word vomit for Jews. Guys should get over it. At least I make good food.

Pizzaaaa. I have finally discovered the greatness of Udis GF products. Udis pizza crust, seasoned tomato sauce, CHEESE, and sauteed mushrooms n onions. I wish I could make this reappear. I want it.

 8. I am quite the judge of character. I mean every guy I meet could be PBM (potential boyfriend material), and he probably needs to be screened. As a Jew, we look for certain qualities: Money (no, I’m just kidding). Really for a hopeful Jewish grandmother, all she can ask if that her granddaughter marry a nice Jewish boy (see the whole handsome part missing – these days the yentas of the family just pray that they can dump their granddaughter on some poor Jewish guy).

9. Similar to reason 8. I’m a Jewish woman. To the male eye, esp the Jewish guys, we are covered in red flags that scream Get away now, while you still have your balls. Not all of us are like this, but it makes it really hard to nab a guy when all he thinks about is you emasculating him in the relationship.

10. Meet my real boyfriend: the Tervis Tumbler, with a lid. Nothing sexier. Guys are jealous because Mr. Tervis gets to go everywhere with me, even to bed. Not only that, but he goes to first base with me every day. I really don’t know what I would do without him. He doesn’t sweat or leak. Def two qualities needed in my busy life.

Secret lovers. Doesn't he just look beautiful glistening in the light. Be jealous ladies, he is all mine.

  Okay, okay, okay. I am crazy, but apparently guys seem to like me. It probably has something to do with the whole fact that I’m not the type of girl that is up your butt all the time, I like basketball, and I’m pretty easy going. I’m actually single because I am always such a busy bee/hey, I have arthritis, so pretty much I’m crippled, wanna date me (not the best subject to talk about on the first date) . Guys are so needy, gosh. I hope ya’ll enjoyed my post.
