It’s That Time of The Week (WIAW)

Hey ya’ll! Of course I am going to participate in my favorite day of the week. What I Ate Wednesday. Who cares if I’m a day late. It is always a party at my place. Sort of. Okay, not really because I’m just a typical nerd always doing my work and what not, BUT this weekend it actually is going to be a party. Today is my younger brothers birthday, so I’m going out and I’m going out on Saturday. Uh oh. Double trouble for this weekend. Anyways back to the subject at hand. FOOOOOOD. Thanks to Jenn for doing this every single week. I don’t know what I would do without having WIAW and getting to stalk a million blogs in one day. Cheers to that.

Lets see what I’ve been eating.

Classic Lindsay oats. Duh. Really though, I’m pretty predictable.
Pumpkin Cheesecake Oats
1/2 c. Oatmeal
1 1/2 c. water
1 banana
1/3 c. canned pumpkin
1/4 c. low fat cottage cheese (1%-2%)
1 packet of truvia
1 dash of vanilla extract
cinnamon
pumpkin pie spice
a sprinkle of chocolate chips

1. Prepare oatmeal in the normal fashion of microwaving water and oats in a container for about 2-3 minutes.
2. Chop up banana into small slices, then place in container and microwave for 1:30 more minutes.
3. Add in everything, but chocolate chips.
4. Sprinkle with a few chocolate chips.

Delicious. The pumpkin provides a contrast to the sweetness of all the add ins, and the cottage cheese gives the oatmeal a creamy flavor that resembles cheesecake. I’ve been on a cottage cheese and oatmeal kick, so don’t worry. I have more cheesecakey recipes coming up in the next few weeks. If you have leftover pumpkin from all the holidays or you want to eat this bowl of oatmeal, I recommend making it as soon as possible. Your stomach will be happy.

Hello newest obsession. Blood Orange Chobani Yogurt. Some people think that it is too tart, but I think it is perfect. When you combine the creamy flavor of greek yogurt with the oranges at the bottom it makes pure heaven in your mouth. It is tangy, so be warned, but those are the kind of flavors I like. Chobani has really outdone itself with its new line of flavors. The apples and cinnamon flavor is also really delicious. I have a passion fruit in my fridge, but have yet to try it. Once I do, I will let ya’ll know what I think. I had been cheating on Chobani with Oikos lately, but with the addition of these new flavors I’m baaaack.

Other new food obsession: Arctic Zero Cookies and Cream. When can you go wrong with cookies and cream? NEVER. I had to sample a couple of bad flavors in order to find this gem. For those of you that don’t know, Arctic Zero is a real low calorie ice-cream that is great when you want a sweet treat, but do not want to consume all the calories from milk fat and what not in normal ice-cream. Now don’t expect a super creamy texture from this ice-cream because obviously it is low calorie, but I like the semi-icy texture and the flavor of the cookies and cream is AMAZING. I topped it with a little whip cream and some mini chocolate chips. Hello delicious afternoon snack. Why thank you, I will gobble you up.

I’ve really been enjoying mangoes lately. While they are super tricky to cut, in the end they are worth it. I’m trying to consume a variety of fruits now instead of just eating apples and bananas because that is boring, plus each fruit provides a different type of health benefit, so why not knock out as many diseases as I can by consuming as many whole foods as possible. I’m smart. Like we didn’t know that. Random nutrition lesson: stay away from pre-cut fruits like mango because those type of foods are not required to have food labels, so you don’t know how these items are being prepared or where they come from. Food safety is so important. You don’t want a foodborne illness – could lead to your death over strawberries or something (that would be a great book title).

My future roomie would probably look down on this, but heck sandwiches are an easy thing to eat before class especially if I’m in a hurry. I’m actually going to attempt to switch to eating tofurkey and go totally pescatarian, but we shall see if I like those products or not. Anyways since I’ve been eating bread in small amounts, these sandwich thins are soo good. They are the perfect size and the bread is really soft. I also tend to always pair my lunch with carrots and dijon mustard to dip them in. Yes, I’m really weird, but I like the bitterness of the dijon.

Things I love in life: Curry, tofu. Curry and tofu. I think I crave it pretty much every day, so instead of shelling out tons of money and buying it from a thai place I decided to make my own. Unfortunately, I’m lacking brain cells right now due to overload from school. Instead of following the recipe, I added a little too much curry. Oh how this was spicy. My mouth was on fire. I think I chugged about 40 oz of water in 10 minutes. While it was really spicy, it was still good. Lesson learned though. Always follow the recipe unless you know what you are actually doing.

Yes my fashion is back. I got so many compliments on this skirt today that I was like I MUST share this with the world. The skirt is asymmetrical and neon pink. I was wearing some black gladiator sandals, but my feet were tired from walking back from class, so I took them off. I promise to deliver more fashion on the blog again and maybe even have some posts only about fashion or maybe how fashion relates to nutrition. That would be weird. I’ll figure it out.

Top Ten Tuesday

Hey ya’ll! Hope everyone is having an amazing Tuesday because I sure know that I am. I haven’t done a top ten list in FOREVER. What is wrong with me? Usually I black out. Probably hitting the booze too hard. Just kidding. I usually fall asleep early then forget about doing a post on tuesday night. However, this tuesday I’m going to rock your world. Yes, rock. I’m in a super hyper mode because the men’s basketball team just won in a super close and important game, and I won a prize! I seriously never win anything, so I’m super happy. What will today’s topic be? Hmmm. After thinking long and hard. Haha. For ten seconds. I’m going to write about the top then things that I’m excited for. Hopefully this will bring a sunshine to everyone’s rainy cloud of finals over his or her head (yeah mostly hers because I know chicks dig my blog). Lets do this thing.

Top Ten Things That I’m Super Excited For (in no particular order because seriously that would be unfair to judge):

10. I’m going to start a food organization on campus with one of my super good friends. It’s gonna be so legit. The focus will be on special diets/healthy eating since I eat Gluten Free and she is a Vegan. With our combined power of awesomeness, we will take over campus and be THE group to join. I have a lot of creative ideas brewing in my head that involve delicious dinners, trips to the farmers market, and volunteering at a local produce or organic farm. Who wouldn’t want to join a group like that? Talking about food and eating are pretty much my life hobbies.

9. SEWING. I’m not sure if I told you or not, but I took a three week sewing class for beginners. We learned how to make a pillow, a bag, and a skirt. It was epic. Now I’m going to be on Project Runway and win. Lets not get ahead of ourselves because I still need to do some more practice on garment sewing, but that is what I plan to do over break once I get back from my super sweet trip. I also plan on buying fabulous fabric while in NYC because I want only the best for the best (me…duh).
Yes, my pillow is super cute. Plus it is food related. It seems that I can’t get away from food in my life. I guess that is a good thing since I’m a nutrition major. Also cherries are one of my favorite fruits. Especially because studies have shown that they help reduce inflammation and aid with arthritis. That is an awesome side effect of eating a delicious fruit if I do say so myself!

8. Hannukah. I’m celebrating the beloved holiday in the Holy Land, Israel. I hope people go nuts because I will. I’ll wear a tacky Hannukah sweater…I don’t think they make those, so I’ll have to make my own. Then I’ll go to all the bars in Jerusalem or wherever we are at the time, bust a move, and convince all the sexy Israeli men that I am the one for them. Hopefully there won’t be too many fights over me. A couple are okay, but damn boys you need to slow your roll.

7. New Pans! My mom got my an early present by buying me some much needed pans. My old ones were apparently super cheap and were turning black. They also burned everything, and when I cooked anything, even on low temp, I would hit the smoke point and in 5 seconds my apartment would be entirely filled with a smokey haze. It was disgusting. Now I have these nice kitchenaid pans. Great for anything. Love sauteing veggies in them.

6. Money, money, money. MONEY. Really? Are ya’ll even surprised? The Jew in me. Happens everytime. First off, my friend that I helped out with a paper or two decided to repay me through the lovely surprise of giftcards and wine. Heck I’ll just take the wine, I need it, but if you want to give me money too I’m not going to complain. One giftcard was to bath and bodyworks. THANK YOU. The other was to Specs, which is an alcoholics heaven. A warehouse of alcohol. Not that I drink or anything. They also have a deli and food products too. I haven’t used that one, but bath and body works. Oh yes. I bought me some wall plugs, so now while I’m writing this post in my room I’m surrounded by the sweet smell of oatmeal raisin cookies. I love life. Oh and I won a $25 giftcard to HEB. I’m seriously winning in life right now. Too bad I literally just got groceries.

5. My future roomie. She is probably one of the best people I have met since moving back to Texas. I would not survive without her. We are actually pretty much the same person, I’m just ridiciously vulgar and inappropriate and she puts up with it. She is the one I’m doing the food group with. Just so you know how awesome we are, our theme song is All I do is Win by DJ Khaled. Anyways, she is so amazing that I don’t even live with her yet and she already cooks for me. Hello and welcome to Top Chef apartment, the healthy version.
It is a wee bit blurry. Blame it on the Iphone. I didn’t have my camera on me, but she made me tofu in this peanut sauce mixed with broccoli and rice. It was seriously bangin. Spicy and sweet. My favorite combination. She even loves me so much that when I busted out my phone to take a picture she didn’t say a word. Yes for roomie understanding. I seriously can’t wait for next year. It is going to be epic.

4. Texas fight! One of my true loves in life is Texas Volleyball and right now we are ranked number 1 in the NCAA Volleyball Championship tournament. I got to go to the first two games, and we owned. I’m so excited, yet nervous, for this weekend because I want them to win, win, win. Sometimes they have rough days, plus one of their best players is out, so each game is like a new day, but I have faith in them. Just worried about the Penn state game because we have history.

3. Winter. Finally cold weather has hit Texas. Seriously, where have you been for the past month while I’ve been sweating to death? Most people think I’m crazy. Mainly because people in Texas can’t handle the cold since they didn’t live in crazy blizzard land Boston. I would much rather be cold than hot for many reasons. Sweating is just not sexy. Seriously. Plus it makes you smell bad, especially for those that aren’t wearing deodorant (you would be surprised, I know). In the cold, you can have a snuggle buddy and not want to push them off the bed for making too much body heat. Yummy beverages. Really we can stop there because those two reasons are good enough.

2. New York. I am jumping for joy. I can’t wait to explore the gluten free bakeries like babycakes, and even enjoy some non-gluten foods like dim sum (even if I will have nasty side effects – I’m in New York, so who really cares). Shopping. I have been saving up all my money to hit up the wonderful stores there. Forever21 in Times Square. Yes, I am talking to you. I will destroy you, I’m just hoping other people haven’t destroyed it because that is my one complaint about Forever21′s they are so gross. Plus I will be wearing this amazing coat while there, so nothing can ruin my trip.
It is sort of hard to see since I just realized two of my lightbulbs have burned out, but it is a BCBG grey peacoat with black accents and black bows. Super cute.

And the number 1 thing that I’m excited about is….

1. My trip to Israel. Um duh. Like you didn’t see that one coming. We just got the itenrary like a day ago, and it made me pee my pants with excitement (okay not really, but you get the picture). We are going camel riding, floating in the Dead Sea, hiking up Masada, exploring the largest open air food market in Israel, visit a winery, and umm going out at night. Let me be honest with you. I’m mainly excited to search for my Jewish husband. Maybe I’ll find one, but if not I always have my eyes open. The most interesting part of the trip will probably be sleeping in a tent in the desert. Yes, desert. Where will we go pee? I don’t know, but I’m looking forward to those adventures.

Back to the Party (WIAW)

Hey ya’ll! It is my favorite day of the week. I always consider it a little holiday because many bloggers take a break from their normal routine and post up an awesome spread of their eats. Best stalking site ever. Seriously, how do you think I found most of ya’ll? We have to give a big thanks to Jenn for hosting this weekly party. I seriously do not know what some bloggers would do without her. Enough talking, lets get to the good stuff: the eats.

PB&J Oatmeal (Gluten Free)

1/3 c gluten free oats
1 1/3 c of water
1 banana
2 tbsp organic raspberry preserves (or any jam/jelly of your choice)
2 tbsp PB2
1 packet of truvia
1 tsp of vanilla

1. Make oats the night before, using normal method.
2. Next morning, slice up 1 banana, place on top of oats, and microwave for about 2:50
3. Stir up everything until banana is “melted” in oats
4. Add in vanilla and truvia packet
5. Then swirl around one tablespoon of preserves at a time
6. Top with PB2 and you are ready to enjoy

I love peanut butter. I love jelly. I’m not really a fan of the sandwiches unless they are made just right, but I thought why not try this classic combination in one of my bowls of oats. I have the best ideas. The natural sweetness from the raspberry preserves made a perfect combination with the saltiness of the peanut butter. Next time I am going to through in some actual raspberries to make the meal even better than it already is.

Yes, for once I actually recorded some of my snacks. Lets not get ahead of ourselves because I did not manage to catch everything. I may have missed a cheesestick or two, but I’m trying here. I want to live up to the WIAW greatness.
I’m being a typical Jew when it comes to my grocery shopping lately, but I buy so much produce that I have to hit up the deals otherwise I will be dropping mega wads of cash all the time on fruit. Right now, Rome apples are on sale. Rome you say? Well, unfortunately the apple does not bring back memories of a warm summer day strolling through the Roman forum while ingesting coconut gelato, but I’m not going to complain because it is still a really tasty apple. I try to eat an apple a day; however, it definitely does not keep the doctor away because I have been having some arthritic pain lately.

Thanks to my school I have made one of the best discoveries. Okay, technically I did not discover it since they came to lecture about their company, but hey I did go out and try it on my own. Welcome to My Fit Foods. The company has pre-packaged healthy meals (with all of the nutrition information on a label) for each meal of the day. They serve vegan, vegetarian, and gluten free products. It is amazing. I went in this past week when they were having a 40% off sale and got two meals to try for the price of one. Jew heaven. This is the Salmon stir-fry, and it was so delicious. There was a wide variety of vegetables with a nice side of rice and a good chunk of salmon with a spicy rub on top. What a perfect lunch time meal.

Yes, I eat green beans out of a can and I like it. No, I love them. I may be weird, but I don’t really care. I’m getting my servings of vegetables, so who cares where they are coming from. That is a lot more than I can say for most people in America. Don’t be hating on my can veggie loving.

One of the best gluten-free snacks out there. Rice pudding. These little snack packs are the perfect sweet treat to hold you over for a while. Topped with fat free cool whip to make pure perfection. Also I have a kerropi spoon that I got from this guy that worked at yogurtland. Thanks for all the free spoons. Now eating my pudding is so much more fun. I think Katie would approve, especially because I have Hello Kitty, Chococat, and My Melody.

Turkey Meatballs with Spaghetti Squash (Gluten Free)
1 lb extra lean ground turkey meat
1 diced onion
2 egg whites (I used egg white substitutes)
1/2 c. gluten free oats
1/8 tsp oregano
1/2 tsp garlic powder
1/4 tsp salt
1/4 c. fat-free milk

1. Turn on oven to 400 degrees, coat baking sheet with spray or use a piece of aluminum foil
2. In a bowl, mix egg whites, oats, and milk until combined
3. Add oregano, onion, garlic powder, and salt and mix.
4. Mix in turkey meat until all into a solid mass
5. Makes about 32 meatballs, roll with your hands, and place on baking sheet
6. Bake for about 10-12 minutes

I placed my meatballs on spaghetti squash. I know ya’ll are probably sick of seeing spaghetti squash, but I bought two of them and I just used up my second one. I can’t help it that I’m a little obsessed with this low calorie pasta substitute. I know nothing will replace the doughy taste of fresh pasta (trust me because I have eaten pasta all throughout Italy), but for those who are health conscious this is a pretty good sub. The meatballs had a great flavor from the oregano and garlic powder and went well with the squash. I’ll be eating these leftovers for a while.

I’m ending my day with a nice cup of hot cocoa, marshmallows, fat free cool whip, and some sprinkles. I feel like sprinkles makes everything better or at least prettier. This hot drink is soothing my throat, which is randomly sore, and making studying for my anatomy exam a little better. Although studying for anatomy, not really fun, ever. Luckily I’m a whiz when it comes to that stuff otherwise I would be screwed like 95% of the class. Three points for being smart.

Of course I’m going to leave ya’ll with a little fashion. This is sort of my low-key look. Yeah I know, low key, haha this is still dressing up for most people that go to school where I do. I just will never get into the lazy look. Its just not me. Anyways the top is forever21, pants are macys, boots are DSW, and scarf is JcPenneys. I paired it with a black leather jacket from Urban Outfitters for when I went to class.

I Like A Good Party (WIAW #3)

Hey ya’ll! I know I have been missing from the amazing action that is What I Ate Wednesday. Usually I’m too lazy to record all of my eats in a day/I am forgetful. My camera tends to die when I’m about to take a picture of food. What is up with that? Anyways thanks to the lovely Jenn for hosting this drool worthy party. I think my Wednesdays would be boring if I did not have a long list of blogs to stalk for inspiration.

Meet Elvis, he is a great breakfast companion, and will keep you satisfied all day long. At least until you are ready for your next meal date.
Elvis Pancakes (Gluten Free)
1/3 c. Gluten Free All-Purpose Flour
1/3 c. Non-dairy milk (almond milk)
1 package 20 calorie hot cocoa
1/2 sliced banana
pinch of chocolate chips
1 tsp baking powder
2 Tbsp Gluten Free Oats
1 tsp vanilla extract

1. Mix all of the the ingredients in a mixing bowl
2. Make 1/4 cup scoops and pour onto pan over medium-high heat. Makes 5 pancakes
3. Then top pancakes with PB (I used PB2), the second half of the banana (slices), and a little bit of syrup of your choice (I used sugar free)

Of course Elvis did not come alone on this wonderful morning date. He brought a long a sexy friend. Dark, but warm. Oh my. I like the way this day is going.
Oh yes! I got myself a fixing of hot, steamy chocolate in the morning. Just the way I like to start off my day. Thank god when I woke up it was 45 outside. I seriously ran around my apartment doing a happy dance at like 6:40 am. I am so sick of this random hot Texas weather. I want winter. NOW.

Lunch was feeling pretty plain today. I was in need of some omega 3′s, so I decided to have some tuna. Mix in a little hard boiled egg, onion, mayonnaise , and dijon mustard. You have yourself an easy masterpiece and filling meal in about 5 minutes. I used celery as a spoon to eat it. Oh yeah I’m creative. Celery actually has some benefits for you too. Not only is it filled with water, but it is rich in flavanoids and contains Vitamin K, which plays a role in Alzheimer’s Disease. Oh Functional Foods class, you are actually coming in handy, even though you will be the death of me.

I have finally discovered the amazingness of freezing bananas. Oh homemade froyo, where have I been without you for these last few months? My concoction consists of half a frozen banana and a handful of frozen cherries. Then to make it even better (although it was already really tasty) I topped it with a sprinkle of Gluten Free Chocolate chips. I’m seriously going to raid HEB for all types of frozen unsweetened fruit just so I can make all different kinds of froyo. I have found a new life passion. My mom will be so proud this is what I’m spending my time doing…maybe not.

My other new favorite snack. Gluten Free Rice Cake topped with organic raspberry jam and PB&Co Cinnamon Raisin Swirl. Yes. I have turned over to the dark side. I have realized the amazingness that is PB&Co peanut butter. If it wasn’t so dang expensive I would go out and buy every single flavor. Right now. Alas I am poor, but I am going to NYC once I return from Israel, so I will beg my dad to let me stop at the store for a picture and a bunch of peanut butter. My dad loves me.

What is this? Breakfast for Dinner? Brinner. Please tell me that some of you watch Scrubs. My brother was addicted to the show when he was younger, so I’ve seen pretty much every episode in existence. Why not have breakfast for dinner? I’m too lazy to actually cook gourmet, so I’m just going to make scrambled eggs. Egg whites, Ranch style beans, ham, onions, and mexican cheese. Such a satisfying meal.

Just to make things even weirder, I had sauteed zucchini on the side. Right now I’m addicted to zucchini, so no day is without it, except when I run out and do not have time to go to the store. Seriously, this is one of the best vegetables I have ever had. When you saute it, the vegetable gets this buttery taste and you didn’t even use butter. Mmmm. So freaking good. AND it is healthy for you. Win, win. Oh and did I mention my great Jew reason: it is really cheap. Jump on it.

I am working a bake sale tomorrow, so today I had to make something for it. I decided on something easy and cute. Chocolate dipped pretzel rods. I even made some gluten free ones, but I forgot to take a picture of them. Plus I had to hide them from myself because I kept nomming on all of them, which made me have to make even more. I’m super pumped for the bake sale, so hopefully people come to buy things, and hopefully cute boys come by too.

Hope everyone had a fab WIAW! I must be leaving because I have an Anatomy Lab Practical in an hour and a half, and before I have to go drop off all my pretzels at the president’s apartment. I’ll leave with you my fabulosity aka my amazing outfit that I wore today. Most of the people here should hire me to dress them, they need it.

Give me MO-re

Hey ya’ll! Guess what? I’m in Missouri. Scary, I know. My mom decided that we needed to come see my grandparents. Not that I don’t love my grandparents, but the town they live in is the smallest thing in existence. You think I’m joking. No. There is one main road with a walmart on one end, a couple of fast food places, and a grocery store. They have a Chinese place that only has two things on the menu. TWO THINGS. Plus they do not have internet at their house, so I finally decided to go steal some at the only hotel in the town. Thank god for Holiday Inn. Anyways I don’t really have time to write a super long post about everything going on in my life because I am sketchy looking sitting out in the parking lot of a holiday inn, but I wanted to share with you some of the things I’ve been eating lately.

Here we go, one more time, everybody is feeling fine..or maybe that is just me on my meds. Uh Oh

Meet one of the great food groups in the world: BBQ. Obviously you do not know what good BBQ is because you do not live in Texas. The state of good meat. Don’t try to kid yourself either. I pretty much refuse to eat BBQ elsewhere unless I’m in desperation for a little taste of home (this has only happened once and it was in Boston). Let me introduce you to one of the greatest places in Austin: Iron Works.
Beef ribs. OH MY GOD. So good. I try to stay away from red meat, but when I have that craving for BBQ ribs, Iron Works is seriously the place to go. This is an Austin staple. The restaurant looks sort of like an old rusty shack downtown, and once you go inside it has an old western flare. Back in the kitchen they have large smokers cooking up delicious things like beef ribs, brisket, and smoked sausage. This place is even so amazing that you can order online. Nom nom nom. A plate comes with baked beans, potato salad, onions and pickles, and a piece of bread (did no consume). When you stick that rib in your mouth, the meat just falls off and the flavors are so rich, especially when mixed with the barbeque sauce. The sauce adds a sweet tangy effect to the smokey taste of the ribs. If you are ever in Austin, I recommend that you go here immediately. Whenever my friends from Boston come to town this is one of the places I take them for a meal.

What happens when you run out of food and have to make a meal from scraps in your cupboards? The greatest creations ever. Say hello to Quinoa Fried Rice.
Quinoa Fried Rice:
1/4 c. Quinoa
1/2 c. of Water
1 bag individual sized frozen peas
Handful of shredded carrots
1 tsp Gluten Free Soy Sauce
3 tbsp of Egg Whites
3 oz cooked chicken

1. Place Quinoa and water in a microwavable safe dish and cover
2. Microwave for 4 minutes, take out to stir, then place back in to microwave for 2 more minutes
3. Cook egg whites separately in small pan, follow instructions for microwavable pea bag
4. Mix all ingredients together in original dish and now you have a delicious meal

Seriously, this dish is a lifesaver. It contains a large amount of protein, carbohydrates, and vegetables. Not to mention it is really delicious. I brought some to eat between classes on Thursday, and so many people came up to me asking what I was eating and if it was easy to make. Due to all of the nutrients it contains, the dish is very filling for the serving size.

A girl needs to treat herself. What better treat than ice-cream? Actually I can think of many, but in Missouri there are not a lot of options. One of the popular places for the local teens to hang out at is Dairy Queen. It is sad, but why not do what the locals do when in town. My brother and I decided to get dipped cones. They are low in fat, and do not contain a ridiculous amount of calories and other scary things like most of the products sold at DQ. BEST. CHOICE. EVER. He got a butterscotch dipped cone and I got a cherry dipped cone. They do not make these in Texas, so it was the greatest discovery ever. So much better than a chocolate dipped cone. Not even joking. I take my ice-cream very seriously.

I’ll leave ya’ll with a little fashion because lets face it, ya’ll have missed my amazing sense of style. At least someone appreciates the way I dress unlike most people in the state of Texas.

Baby I’m back

I’m back, back, back, back again. Lindsay’s back. Hey ya’ll. I know I have been missing for a while. Almost a week. Damn that is a long time for me to be away from the blog world. I mean it is surprising because I do love to hear myself speak. I have been in sort of a funk. Well I had a whole WIAW post for my birthday, but then because it was National Arthritis day I naturally had to have a flare up in my back, so I was sort of paralyzed. Not fun. However my doctor prescribed me some good old Vicodin, so lets just say I was having some “high” times. What have I been up to lately

I have been working on more oatmeal creations. Like duh. What else would I do in my non-existent spare time besides think of food? Umm nothing. Introducing the wonderful, sweet, delicious….Chocolate Chip Raisin Oatmeal Cookie Oatmeal:
Chocolate Chip Raisin Oatmeal Cookie Oatmeal (tongue twister):
1/3 c. GF Oats
1 1/2 c. water
1 microwaved banana
handful of raisins
1 tsp GF chocolate chips
2 tbsp PB2
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla

1. Prepare oats like normal method, but this time microwave in banana when you re-heat them in the morning
2. Mix in cinnamon, nutmeg, vanilla, raisins, and chocolate chips
3. Top with PB2 and you are ready to rock.

What would I do without oatmeal? It seriously keeps me full for hours and hours, so I can survive my classes that are back to back. Plus it just gives me something to do when I don’t want to pay attention in my classes. What else has Lindsay been nomming on since she has been gone? Well lots of salmon. I need my omega 3′s because it helps with my arthritis. OR DOES IT? I’m not really sure because I have been having lots of flare ups, but oh well I still love salmon to death. I had this sesame ginger salmon that I purchased at Whole Foods. Seriously? I am super Jew, and found a fresh piece of salmon for super cheap. $5. I know I’m impressive. It was large. I cooked some zucchini for the side. It was a meal for a queen (don’t confuse with a JAP).

Besides eating up a storm, I have been trying to be a fashion maven. Or at least pretend I have any style worth noting. I have a huge job interview coming up (tmmrw) at Betsey Johnson, so let us pray. I need some monaaaay honey. Really though. Not even funny. I need to be able to afford my shopping habits, my food habits, oh and after this past weekend I need to start affording my drinking habit because lets face it, your birthday is only once a year, so you can’t live off free drinks forever. Oh wait, look at me, I get free drinks all the time. Hahaha I swear I’m not really conceited.

 Okay, lets get serious. We all know why you are reading this post. To find out about my EPIC birthday celebration. To tell you the truth I don’t really remember it. I guess I partied a little too hard. Lesson 1: Never drink an entire bottle of wine before even leaving to go out. Why? You will chunk up the deuce. EVERYWHERE. Oh and apparently you start fist punching the air a lot too, but that is after multiple rounds of drinks following the wine:

Oh where to go to celebrate the 22nd birthday. I have an idea. Lets go to every bar imaginable. I love birthdays. Mainly because I’m Jewish and I love free things. FREE DRINKS. Being a girl already rocks because guys buy you drinks, but on your birthday it is extra special. Luckily for my friends, we went to a bar tab that some frat was hosting, so everyone got free drinks for a while. Vodka and Sprite. Rum and Pineapple. Keep em coming. Unfortunately I can’t really remember anything after this, but I do know I made a really good friend that night:
Oh mister bartender. What would I have done without you? Holding my hair back like a real gentleman. Seriously. I don’t want to mess up my hair. He recognized the importance of having nice hair while wearing a pink fluffy tiara. I ended up getting his phone number, and he may have kissed me, but I’m not really sure about that part. I partied until the break of dawn. Not lying. I ended my night, well it was more like morning at that point with Kerbey Lane. If ya’ll are ever in Austin, CHECK THAT SHIZ OUT. It is so good. I mean you can’t go wrong with open 24/7 plus gluten free friendly and vegan friendly. Loving the locals. The downfall of partying: Not making it to Dallas to party more. Yes, EPIC FAIL. I did not wake up until Friday night. Lesson learned, but not really. It was a hilarious night. Now you may ask, Lindsay did you have a hangover? Umm duh. I consumed the amount of alcohol for about 10 men, so yeah I needed a cure. My usual cure is Dr. Pepper, but I have found something better:
Touch screen soda machine. You are my new best friend. I wish I could buy one of these for my apartment. I would literally attach an IV from it to my arm any time I went out drinking. So good. I had diet dr. pepper with cherry. YES. They have flavoring too. What did I do without this machine in my life? I have no idea, but I have been missing out. Anyways, I am so exhausted. My body is still recovering from the amount I partied this weekend. Did I learn anything? No not really. Did I have fun? Ummm DUH. Do it again? HELL YES.

Mom Knows Best

Hey ya’ll! I am finally able to blog. I went home for the weekend because there were a couple of things just annoying me, and I needed the wise wisdom of my mother. The only problem with my mom’s place is that the internet connection and macbooks are the worst combination EVER. Seriously I have never heard of a wireless just not being compatible with a computer. So weird. My mom probably did that so I can’t get up into trouble on the internet. Too late. I’ve corrupted the blog world. More like they have corrupted me. Lets talk about my favorite subject. Me. Oh and what I’ve been up to this past weekend.

Friday was amazing. Okay, lets not get ahead of ourselves because I did have to go to a makeup lab from 5-8 pm on Friday. It was really boring. Usually lab sucks, but no this lab was awful. All of the kids in the lab just stayed to themselves, and HELLO I’m the kind of person that needs to talk. So what did I do? I just started having conversations with the TA about random tv shows. Although I feel like I may have been sort of mean to him because when he was teaching the sheep brain to the class, I just kind of sat in my seat filling out my hw. I can’t help it that I’m confident I’m going to get an A. I started out the morning with chocolate covered strawberry gluten free pancakes. Nom nom nom:
For these pancakes, I just followed CCK’s recipe for brownie batter pancakes, but instead of the Hershey’s dark cocoa I used an entire packet of sugar free hot cocoa. Also, I added sliced strawberries and GF chocolate chips. I omitted the Stevia. They were freaking delicious. I just wish the supply was never ending. A girl can dream.

Friday was initiation for one of the organizations I am in. It was epic. I will go more into detail about it later when I have the pictures because they are hilarious. Pretty much you will just look at them and be like who is this weird chick? Yeah I do odd things in my spare time. Like ya’ll didn’t know it anyways. My group is kind of like a sorority, but a cool one. We got assigned bigs. I think that is really cute. Plus who doesn’t love gifts. My big is awesome though. Although technically I’m older than her, but eh whatever it doesn’t bother me.

PRESENTS. I like presents.

 Saturday I just woke up, not feeling the best because of lack of sleep mixed with sangria (I have a problem with the bottle haha jk), so I decided to drive to my moms. It was a nice day. It finally poured down rain probably because god was so upset by the embarrassing loss of the Texas Longhorns, but we get the satisfying notion that we don’t live in OK in the end. My mom and I spent the day running errands, and doing what girls know best: SHOPPING. I have seriously been on the hunt for white jeans forever. It was like all the jeans got together and decided to hide from me, but luckily I’m a master of hide and seek because I found some.

Found you. Then again I found a couple of other things too. Kind of bad picture, but I got leopard print denim shorts, white skinny jeans, and indigo skinny jeans.

My mom gives the best advice. I mean come on whose mom doesn’t give the best advice. A couple of things have been bothering me lately, and I would write about them, but then again I don’t want to seem like a passive aggressive B. The old me totally would have blasted the person that it involves, but I’m trying this whole thing where I’m mature and it is pretty hard. To cheer me up even more she took me to the best place in the world. YOGURT PLANET. Right now they have this pumpkin froyo and it is the most amazing thing that has ever entered my mouth and my life. Seriously. I will drive there every day if I could.

 Later that day, I went to my bubbe’s. Apparently it is some Jewish holiday called Yom Kippur. I’m such a bad Jew. I knew it was the holiday, but I wanted to drink and have fun instead of go to services. Trust me. You do not know bad until you attend a Jewish service. I do not know anyone else that has that long of a service. Plus standing up for long periods of time. WTF. Do you really want us to faint and cause some crazy religious seen? Probably because then Jews will finally get some representation in the world. Can I hear an AMEN? She was having a break the fast (yes, you have to fast for 24 hrs, no water, no nothing, we go hard in the shul) at her house, and I went because she wanted me to help her set up my birthday present. She thought I was coming in on Sunday, so I surprised them. It was cute how excited they were to see me. We signed up for my sewing classes. So excited. Seriously. I’m already Project Runway material and I don’t know how to sew. I have that whole “big” personality thing that is needed for TV. Or maybe I just like to think that?

Sunday is funday. Usually it is more like OMFG I forgot to do my hw, so I’m running around my apartment like a chicken with its head cut off. Instead I relaxed, had the best veg session on the couch watching tv, and I went to a cooking class at Central Market with my mom. I kind of cut myself off from the world by not bringing my camera anywhere, so unfortunately there are no pictures, but if you live in Texas I do recommend that you go to CM asap and take a class. They are amazing. Mine was Fish 101. We learned about stuffing shrimp with crab and brie, how to get crispy skin on striped bass, and we learned to poach salmon. I really just liked eating everything. They serve wine too. Lets just say my mom got a little tipsy and it was pretty funny. There were even some cute guys in the class. AND they were straight. Win. Yeah, I’m always on the lookout for potential guy material.

Right now I’m doing a little bit of this:

I GOT AN A ON MY RESEARCH PAPER. Yeaaaaaaa boiii (although I make a much more attractive person that flava flav). Eat that green tea. I am your master. Yes when I found out I literally told that green tea off like it was an actual person out to get me. It was though. It made my arthritis flare up, and I wanted to strangle it. I survived. Thank god. Word.

Stealing An Idea

Hey ya’ll! Thank god it is Friday. It has been one of the longest weeks of my life. Still blaming it on the green tea. It sucked out the life from me. BUT. I’m back, back,back, back again. For being white, Eminem is a pretty legit rapper. Well, more like I think he is just really funny. Today I am sort of stealing someone’s mojo or idea. Cely has one of my favorite blogs out there. Like me, she is hilarious (Okay, so I’m not, but she is, so check it out). Every Friday, she writes about 15 things, so I’m going to steal her idea and use it too, but only do fourteen.

1. Can we just talk about how my birthday is coming up on Wednesday again? Really? I know everyone is as excited as I am. Birthday tiara? Check. Birthday suit? Check (don’t worry I won’t be going around in it). Lab till 11 pm? WTF. Yes, I have lab on my birthday.
HOW RUDE! If you are so much better than me, then why did you have all those special problems. Huh. Yeah that is what I thought.

2. Speaking of lab, I have to make up the lab I missed on Wednesday by going tonight at 5 pm. WTF. Seriously. Did you sit in your office late at night thinking of how you could ruin Lindsay’s weekend or at least try, because you succeeded. Sitting for three hours while staring at a dead feral cat is not how I planned on spending my Friday night.

3. Oatmeal is my new art form. I really just sit in class all day thinking of awesome oatmeal creations. So much better than actually listening to what is going on in class. And I wonder how I make A’s on all my exams. Some things we will never know. Today I had S’mores oatmeal and it was AWESOME.

Gluten Free S’mores Oats:
1/3 c. GF Oats
1 1/2 c. water
1 banana
pinch of chocolate chips
handful of marshmallows
1 GF graham cracker
1 packet of cocoa

1. Use a recipe for overnight oats or you can make them fresh on the stove in the morning
2. Mix in one packet of 20 calorie hot cocoa or you can use really good chocolate (I’m just cheap and I think it tastes good)
3. Mix in a handful of mini marshmallows, one gf graham cracker, and some chocolate chips.
4. Now you have an amazing bowl to sit by the fire with and pretend you are out in the woods camping.

4. My mommy. I love her. She seriously is the greatest mom in the world. This weekend we are taking a cooking class together at Central Market on different fish. Hopefully I don’t burn down the entire market. Here is to hoping.

5. There are a few things I’m confused about in life. For instance, if the dishwasher is full, why don’t you empty it instead of creating a mountain of dishes in the sink? OR if the trashcan is overflowing and smells awful, why don’t you empty it? OR why does the AC have to be on 82 ALL DAY, especially in Texas? I’m a cheap Jew, but damn I would rather not be sweating inside my own apartment. I just get annoyed easily, so instead of being a mega b about things, I’ll just hash it out on the blog.

6. Udi’s gluten free pizza crust. For those of us that are too lazy to actually make things by hand/have no time in the day to make everything home-made, Udi’s gluten free pizza crust is life-changing. Did you get that? I am dead serious. This stuff may be better than normal pizza crust. I need to load up on some because I am about to go on a crazy pizza making project.

Gluten Free Hawaiian Pizza:
1 Udi’s Gluten Free Crust
1/2 c. of chopped pineapple
3 oz. Deli ham
1/2 c. caramelized onions
1/3 c. Mozzarella cheese (I was out of this, so I was lazy and used a cheese stick)
4 tbsp. BBQ sauce (Get the bone sucking one. weird name. SO GOOD)

1. Preheat oven to 375-380
2. Place all toppings on pizza crust
3. Heat in oven for about 15 minutes or until cheese melts really well.

7. Boys. I like boys. Who doesn’t like boys? Even Kurt likes boys, and I have to say he has pretty good taste. Remember when he had a crush on Finn? Hilarious, esp now that they are brothers. ANYWAYS, while there is this guy that I sort of see/like, I just discovered this guy in one of my nutrition classes. Just discovered? Yeah, I know I’m surprised I just really looked at him for the first time because being in nutrition there are only about 5 guys out of like 50 students in each class. Once I spotted him, my mind went crazy thinking about scenarios. Wow, yes I have officially reached creepy levels. I’m just gonna end it on that note.

8. Foodie Pen pals. I am seriously so excited, while I have to edit my original awesome plan to meet the needs of my pen pals diet requirements, I am still so excited. I love getting packages in the mail. If you haven’t heard about it, check out Lindsay’s blog (yeah, I know she has the most legit name ever, right?). Ya’ll should all do it for next month, and probably hope that you have me because I’m awesome to the tenth power.

9. This outfit. Needs no explanation. It is awesome. It isn’t even close to fall here in Texas, but I’m sick of it. I decided to make it fall myself.

10. Initiation. That word usually scares me. I am excited though. I belong to this organization that supports the men’s basketball team at school. It is super cute. Normally I am totally not into all things sorority. I mean I’m sorry, but I just can’t sit for an hour discussing how much I LOVE big t-shirts. You think I’m joking, but the other day three sorority girls were talking about this. Not that I bash all sororities because my best friend is in one. Anyways, my group. It rocks. We do things like decorate the guys locker room, have social events with the basketball players, have date events, etc, etc. Tonight is our initiation for new members (me), and I couldn’t be more excited. Although I’m going to be a complete hot mess since I will be coming straight from lab. Hopefully, I won’t be smelling like formaldehyde. A girl can hope.

11. My birthday. Self promotion at its best.

12. THE TEXAS STATE FAIR. In order to celebrate my birthday, besides going to sixth street with my friends (think Bourbon street, but a little less crazy), I am going to the Dirty D (Dallas, for those of you that are white) to stay with my older brother and his girlfriend. Can I say exciting? It will be depressing that I can’t eat all the fried foods (pb&j, beer, oreos, pretty much anything you can think of), but I will be going on all the rides until I feel like I have to puke. Besides the fair, Dallas just got an H&M. So freaking excited. Since moving back from Boston, I feel as if a piece of my heart has been missing.

Big Tex. You had me at Hello.

13. I have to sell Yankee candles for my organization. Not really looking forward to this because I am not the best saleswoman. Knowing me, I’ll probably just end up buying a bunch of things for myself or as gifts for people. Yes, I am literally that lazy.

14. Pinterest. Where have you been all my life? I can spend hours mesmorized by the amazing pictures on this thing. Seriously, it is like crack. I had to block it on my computer while I worked on my research paper because every 5 minutes I would slowly inch myself to the screen and start looking at all the DIY projects I need to do to pimp out my apartment.

For the next few weeks, I plan on participating in my own episode of pimp my apartment. Right now it sort of looks like a depressing place to live, but with my crafty skills it will be a diva worthy apartment in no time.

A Little Too Late (WIAW#2)

Hey Ya’ll. I’M ALIVE. I feel so bad that I have neglected my audience and my blog, but I have been crazy busy. I survived my green tea research paper. Really I told it who was boss. Okay, I should stop lying to myself to make me feel better, but I think I did better than most people in my class, so it’s all good in the hood. I don’t have a lot of school work for the next few weeks, so ya’ll are stuck with me. I know, exciting right? I’m coming a little too late, as JoJo would say, to the What I ate Wednesday Party hosted by the lovely Jenn, but hell its WIAW I start the party when I want to. So here were my eats and what my day was like today:

6:20: Wake up call. Every morning I wake up to Jay-Z. I feel like the luckiest woman in the world until I realize that I’m not Beyonce and I’m actually white. Story of my life.

6:25-40: Hope in the shower. Have a small American Idol sesh. Obviously I am the winner. I am the best diva out there. Rachel Berry can eat her heart out because I’d kick her butt in a diva off. I think I may still be in the dream state at this time…

6:50: Make interesting food in Tupperware. What is that? It was the most amazing creation EVER inspired by Angela. Now she is amazing. If I didn’t have to go to school and actually live a life, I would seriously just live in the kitchen making all of her recipes.

 1. Cook oats the normal method I have always been using
2. Add into the oats fat free cocoa, GF chocolate chips, and frozen cherries (dethawed/microwaved in oats)
3. Mix a 1/2 cup or more of frozen cherries and a frozen banana in the blender.
4. Pour half of oats in a bowl, then layer soft serve, then more oats and more chocolate chips.

7:30: Trudge to class. Oh god I should be honest, I’m so lazy that I walk to class. I have Food Science on MW from 8-920 am. I do trudge, but just from my car to the classroom. I’m a morning person, but I really just don’t like going to class.

8-920: Oh Food Science. What would I do without you? Hmmm probably sleep late. We have quizzes every day, but they are pretty easy. I mean it is NBD when you are as intelligent as I am. There she goes again being her conceited self…HEY! I do have the right to brag every once and a while, esp since I’ve gotten above 95s on all my exams. Anyways, Food Science is the best class ever. I really get to think about things…like when the boy I like will finally realize that I’m the one for him or what craft project I’m going to do next. It’s some real prime A thinking time.

925: Today was special. I got to go home. I know exciting right? Oh, but not really. I had an emergency appointment with my rheumatologist because my arthritis had a really bad flare up over the weekend. I hopped in my car after class, turned on the radio, Super Bass came on, and I busted out a celebratory dance move.

950: My mom plays on a team at a bowling alley, so I went over to meet with her. I chatted up a storm. People are probably like why doesn’t this girl ever shut up, we come here to bowl, not to listen to some dramatic white girl go on about how tough life is. My mom even bought me a glass of iced tea, so I would have something to occupy my mouth with and be quiet.

1140: We needed a quick lunch before my doctors appointment, so I went to pick up Vietnamese from our favorite place in the world: TAM’S DELI! Yeah I really do go there like once a week. It is gluten free friendly and the food is so legit, plus the owner loves us. I had shrimp spring rolls and a vermicelli bowl. So good. I’m re-using a picture from last week:

1230: Catch up on Glee. OMG. WTF. I love this show. The third season is turning out to be amazing, at least in my opinion. Britney S. Pearce. I mean come on, how can you go wrong with having a unicorn for class president. Plus Santana, DAMN I love her. This season is filled with so many twists, it is mind blowing. Obsessed.

1:30: The dreaded doctors appointment. This weekend I woke up and could not move my wrists at all. Seriously, I was in so much pain that it took me 10 minutes to put my clothes on. I was an 85 year old in a 21 yr olds body. Is this real life? Oh yeah, the joys of being me. My doctor took one look at my wrists and saddle joint in my thumb, and just was like yeah it is bad. Like I couldn’t tell? Anyways, she has increased my medicine (I’ll go into detail about my arthritis in tomorrows post).

5:00: FINALLY. That was the longest appointment of my life. Did they not get the notice that I wanted to go to DSW? Girl over here need her some shoes like now. What did the world do before DSW? I seriously have no idea because it is heaven to the shoe addicted girl. I’m like a fat kid going into a candy store, I have an explosion inside from the excitement and then I run around like a chicken with my head cut off. It is a great site to see. Usually the workers just let me be because I’m insane. It wouldn’t let me upload a photo, but I want these in PINK.

6:00: Eat some din din with mi madre. Salmon with raspberry glaze. Can it get any better? Yes, we could have actually gone to a seafood place, but that would have meant that we would need to spend money. Def pulled the Jew card out on that one.

6:30: BTW Did I mention that because I’m crippled and had to go to an emergency infusion treatment that I got to skip my other two classes of the day? Oh yeah, I did. It was awesome. I love nutrition, but I hate sitting around stupid people. Anyways, I went to the UT volleyball game. I love volleyball. I love the Longhorns. I love Texas. End of story. The team is amazing. It was packed because it was a rivalry game against Texas A&M. Oh those aggies…(my older brother was one), but they think they can compete in sports. I think they live in their own candyland. Whatever floats their boat.

After the game, I went back to my apartment and here I am. Writing this semi-lame post. I need my mojo back. Maybe they sell some special berries at HEB to help revive your soul after it was destroyed by writing and research. I should look into that or maybe I’ll just invent some type of food myself. I’m exhausted, so I’m out. Hope ya’ll had a fab WIAW and that I didn’t bore you to death because I think I just bored myself to sleep. Lies. I’m an old grandma and it is waaaaaay past my bedtime.

Things I realize..

Hey ya’ll! Hope you have been having a good as Monday as you can. I mean really who says have a good Monday because they suck. Especially when you have an exam. Big news: I wrote my first guest post! Yeah, someone actually let me write on their blog. I’m surprised to. Check it out at Kaila’s. It’s semi-serious. It’s about my arthritis, but the cliff notes version. I wouldn’t do that to ya’ll. I’ll be giving you all the juicy details later on when I decide to be serious for once.

 Here are some things I have realized lately

I realize that when my brain has been so focused on learning things that I create crazy creations. Pina Colada Oats. Pretty epic. Not gonna lie. The only thing missing would be coconut extract. Being the lucky gluten free person that I am means I can’t have coconut extract. Unfair. I’m used to it. Recipe later. While I made these I sung and danced to the I like Pina Coladas song. My neighbors got a good show.

 I realize that by cleaning my entire kitchen today I have become a mature and responsible adult. HA. Let’s not get ahead of ourselves. I mean I am the same girl that backed into the garage because I was too focused on getting to my friends apartment in order to go to 6th street. Then when my mom’s bf came over to assess the damage, the same girl, ME, asked him if he thought it would be okay to leave the garage door shriveled in a million pieces so I could go out and party. As we can see, I really had my head on that night.

I realize that I have the best lab partner in the world. While I’m sitting there, okay it’s more like sleeping, with my head face planted down in my book, she is taking photos of all the histology slides we have to remember and sends them to me in an email. What did I do to deserve her? The only thing I ever contribute to the group is a bunch of laughs, and they probably only laugh to make me feel better about how I am the odd duck in the group.

I realize that I’m going to be 22 in about 3 weeks. Luckily I decided to take a fifth year (next year), just so I could party more. Obviously by party I mean that I get to examine more slides, cram more information in my brain, and hopefully make all 4.0s. What can I say? I like to get down and nerdy.

I realize that it was actually Monday. Until about 4 pm today I was convinced it was Thursday. Even though I knew my exam was on Monday (don’t worry I went and took it), but I still thought today was Thursday. Obviously, I was extremely disappointed when I realized I had three more days of classes. Brain fart. More like brain dead. I blame it on the Texas heat. Seriously can we get some cooler weather down here. I’m not even asking for much. Low 90s. Maybe. Okay Ill compromise. Mid 90s.

I realize that I’m literally always the only girl sweating by the time I walk all the way from my apartment to class. WTH? Seriously. All these girls in my classes act like its not 105 degrees outside. Their makeup is always perfect and no drops of sweat. AT ALL. I’ve decided they must be robots. I’m just gonna keep telling myself that to make me feel better about being the fashionable sweaty monster that no one wants to sit by in lecture.

I realize that my friends put up with a lot from me. I say weird things, and they still speak to me the next day. Either they must really love me or they are desperate for friends (def not).

Okay, so I realize that I’m just plain weird when it comes to making meals. It is def not the studying. For lunch I had a very interesting combination of a grilled large portabello mushroom, a frozen chicken burger, cheese, and sauteed onions. I mean just look at the picture. Who looks at that and is like damn that looks good?

Weird I know. Don't even bother asking what was going through my head.

I realize that when I walk to class I look intense like I’m out to kill someone or something (Idk apparently that’s what my friend said). I’m really just in my little candyland day dreaming about my life and planning what I have to do for the rest of the day. Yes I sort of live in my imaginary world a lot of the time. Let’s not even get into it because someone might send me to a mental hospital to be checked out.

Now I realize that there is this crazy gnat flying around me trying to be my blend. He doesn’t even have a blog. I don’t think he knows what the word blend is. I’m going to go run away from him now, but hope ya’ll have a wonderful rest of the night.
