Photoshop and Trippy Light Shows

Hey ya’ll! I hope everyone had a fantastic New Years Eve and is now having a great New Years Day. Most people talk about resolutions and what not, but I don’t really believe in them. Just do it for you, and not because it is a New Year and you feel guilty about certain things. Yesterday was sort of a rough day for me. I really don’t want to get into it right now, so I’m going to talk about my wonderful trip to Israel in order to distract myself. Day 2 and 3 here we go.

The second day everyone woke up refreshed since we all passed out around 8 pm and got about 10 hours of sleep. One person passed out in the bar which I find quite hilarious. We are college students after all. Haha. What did they have up their sleeves for us to do today? Well, luckily it was a pretty amazing day. First off we were headed towards a site for a jeep ride. At first, I was like oh a jeep ride this will be a pretty casual way to start off the morning, but oh my god this was the most exhilarating moment EVER.
We drove through hills until we got to the part where we had to off rode. We drove through old minefields that still had active mines. Gideon told us hilarious stories about how the every once and a while a cow would step on a mine, blow up, and the town would have a huge feast, sort of like a BBQ. We died of laughter. He then told us of a Muslim joke about how one day a man was walking behind his wife through the minefield, his friend came up to him and asked why he was not following Muhammad’s law of always being in front of the wife, and he responded Muhammad made the law before there were minefields. Ha ha ha. But not really because that is so uncool that you would let your wife blow up before you. Anyways, we eventually reached an area where we got to get out of the car and walk around.
We stopped at an old battle site that over looked a part of northern Israel. There were old trenches that we all got in to take photos. Once we were there, we listened to a poem about the battles that occurred there and then the main tour guide gave a brief history lesson about the land. PHOTOS. Seriously, people were taking photos every five seconds of the trip. The tour guides gave us a couple of more photo opportunities and then made us pile back into the jeeps. I was happy getting back into the jeep because that meant more time with Gideon. Sweeeeet. On the next part of the drive, we got to learn some life lessons by Gideon. Winning. He asked us if we knew of the photoshop. Well yes Gideon, we do. He responded that he took a class on it and now he can take a photo of an ugly woman and make her into a star. OH MY GOD. Did he really just say that? Yes, he did. Then he serenaded us with a song called bumpy road. Definitely song of the year material. It went bumpy road, bumpy road, bumpy road.
This is our jeep group with good old Gideon. The best part of the entire ride was probably when he told the annoying girl (the one in white within the headlock) to SHUT UP. We all cheered and laughed. We were really sad to leave the jeeps, mainly because of Gideon, but also because it was just one of the best activities we had done so far. The entire group of 40 students and 2 chaperones piled back into the bus, and we were on our way to the next site. We were going to the Golan Heights. This is such an important place in Israel history because it is where we fought back the Syrians in the Six Day War.

The Golan Heights was a really interesting place not just because of the history. For one, there were these weird statues all up the pathway to the top of the mountain. I guess modern art has reached the more rural regions of Israel. I have some great photos with the artwork, but they are on my friends camera and she hasn’t uploaded them. Lame. Another thing on top of the mountain was a coffee shop called Coffee Anan. This is really funny because it is a play on words. Not only is it a name for a diplomat, but Anan also means cloud in Hebrew and the mountains are sort of in the clouds. I enjoyed it. We were given a brief history lesson over the Israeli’s triumph over the Syrians and relations today. To me, it was really crazy how you could see the actual border between Syria and Israel.
There was this really cool sign at the top of the mountain. It pointed to all different places and it even had Washington DC on one of the sides. After more photo ops and a bathroom break for everyone (did I mention that public bathrooms in foreign places are super sketch – this one was missing a toilet seat), we all got back on the bus. On to our last place of the day. We were running sort of late, so we had to rush, but we were going to an olive oil factory. I was so excited. I like olives, I like oil, so what a great way to end the day.

This is the inside of the factory, isn’t it beautiful? We then got to listen to probably the best speaker I have ever heard. He sort of reminded me of my dad’s father. He probably taught us the best lesson in regards to the Israel-Palestine conflict. He told us that you can’t get arguing about the past because that will get you nowhere, it is only about the future and what we can do about it. We must start from no history in order to build a future of peace. I really like that because currently it is just a battle of who was in Israel first or who shot who first. The situation is way out of hand, and there needs to be peace. After his lecture, we got a tour of the factory, and then got to sample olive oil and beauty products. EVERYONE was so moved by this man that we all bought some sort of product. I ended up getting a magic cream made of three ingredients (all-natural) that would help my psoriasis. Success. The tour guide was rushing us because we had to eat lunch, buy snacks, and go back to the hotel for Shabbat services. One of the craziest things about Israel is that on Friday everything closes down in the cities for Shabbat. Literally everyone follows this, not just the Orthodox. We ended up rushing through everything to make it back in time for services. That night we had Shabbat dinner, went to services led by one of our group members, and had an oneg (which is a gathering where we sampled some local Israeli desserts). Since it was Shabbat, and we are typical college students, we partied on the terrace that night.

The next day was Shabbat still. Unfortunately because of the day the entire city was closed down, so we had no activities planned for Saturday. Pretty much we had free time to just chill in the hotel, so I took advantage of this and slept till about 1045. We had been getting up at 6 am, so this was a nice break. When I finally woke up, showered, I went to lunch with a bunch of my friends, and then we had a mandatory walk with just our group.
We ended up going to a nice spot in Tiberias that overlooked the Knesset. After taking a million and one photos, we had small group discussions on what it meant to be a Jew and how we felt a connection to other Jews. It was a really intimate moment, but of course some people ruined it when we had the general discussion by going on and on about the most irrelevant information ever. People in Israel are so nice though because the man who lived in the house whose property we were on offered to invite all 40 of us in his house, but our tour guide declined the invitation because lets face it we were a crazy group. We had to rush back to the hotel because it was time for Havdallah services. Once we got through another set of services, we all got to go on the bus because Shabbat was over and we were going out! Finally, our first time to eat on our own.
Before we ate dinner, we got to watch a really cool light show on the Knesset or Sea of Galilee. It was really beautiful, and I have a video of it, but it won’t let me upload it. How lame. After the show, a couple friends, my brother, and I walked along the boardwalk in Tiberias looking at restaurant menus. Finally we eventually decided on the first place we saw. Best choice ever. It was the cheapest place on the boardwalk, and after pulling reviews from everyone it was the best food too.
Lets talk about how mindblowing this dish was. Apparently it was scalloped potatoes or at least that is what it translated to in English, but it was far better than scalloped potatoes. It was large chunks of a potato, covered in cheese, mushrooms, and this delicious Alfredo-like sauce. So good. The cheese just melted in your mouth and made a great combination with the Alfredo sauce. Everyone agreed that my dish was superb. Everyone else that was with me got pizza, and one girl got a pasta dish. Gluten free dish for the win!

We then walked along the boardwalk looking at little shops until we decided that dessert was a must. Nothing much was open, but we remembered back where our restaurant was that there was a gelato shop. Ice cream it is. They had tons of flavors, so it was really hard to pick, but I ended up choosing pistachio. For some odd reason, I have been craving that flavor lately.
It is sort of hard to see, but it was really delicious. It had a nutty flavor with a sweet overtone. I would definitely have gotten it again. My brother got kinder bueno flavored, which is a chocolate candy. He actually ate his in about 5 seconds, so I was unable to document it. That tended to be a problem on the trip because we shared food a lot, so he would gobble it up and I would pull out my camera and be like whaaaaat. He would just smile and be like oops. After meeting by a shop, listening to a tale about how these three girls spent 40 shekels on ONE shot (that is about a 11 dollar shot), we all got back on the bus and headed to the hotel for the night. Once again we partied on the terrace and passed out for the evening. The next day we had an exciting day planned because we were getting our 8 Israeli soldiers that would travel with us for five days.

An Award..Must Be A Joke

Hey ya’ll! It is definitely not a joke. I got the versatile blogger award from my girl Haley at Health Freak College Girl. She is a health obsessed chica in college (duh – sorry, some people can’t read), and she is studying kinesiology, which is totally dope and there are some hot guys in that field too. Get it girrrrl. Some even more amazing facts about her is that she is a runner, and I am so jealous of that. Eventually one of these days I will make it through a run without ending up crippled the next day. Yes arthritis, you will not get the best of me. Wait, we are talking about Haley. God Lindsay, stop being so self centered. Anyways, she is a pretty cool girl and you may hear from her in the near future. Cough cough she is doing a guest post cough cough. What? That wasn’t obvious or anything.

Hmmm…Seven facts about me:

1. I had a tumor in my foot when I was 8 years old. WOAAAH. No, don’t worry, it was benign. The problem was that it was sitting right on my nerve tissue, so pretty much I couldn’t walk because it hurt so bad. I had one surgery done, but because it was on my nerve tissue they couldn’t get it all out. We thought it was all good, but I ended up having to fly to Utah to see a specialist. Thankfully, the pain went away, I learned to walk on it again, and I’m all good. I have this gnarly scar on the bottom of my left foot, but I don’t want to take a picture of it, so toooo bad.

2. Meet Hippo. He is my friend. Yes, I actually talk to him like he is an actual person. I may be crazy, but it is all good. I’m totally not ashamed to admit this, but I sleep with him every night. Otherwise I have a hard time falling asleep. He is one of those bead pillows, but in an animal shape. I love him. Unfortunately he is depressed right now because he is not coming to Israel, so he is camping out in my suitcase trying to get a spot for the flight. Sorry Hippo, but I need room for all my fabulous clothes.

3. When I listen to music, I pretend that random dreamed up events are occurring. Pretty much my ipod and the music on it is the soundtrack to my life, but an imaginary one. Yeah, I’m crazy, but I guess whatever helps you get by, and this is definitely entertaining during working out. Seriously I can spend hours on the bike and forget that I’m actually riding the bike. Okay Lindsay…..

4. I have a slight obsession with oatmeal. Ya’ll probably know that though. It doesn’t get boring to me though. Every day it is like I’m eating something new. That is probably because I make creative bowls, but I probably would still eat it all the time if it was just oats, some brown sugar, and raisins. Nothing like plain and simple. Nom nom nom.
This is actually a pretty plain bowl of oats for me. It is just my normal oatmeal prep method, smashed blackberries, some gluten free chocolate chips, cinnamon, and a tbsp of PB2. See, pretty simple. I could actually eat even plainer oats, but that probably will never happen because I have a fun time making up new flavors to try out and post for ya’ll to see.

5. My favorite thing in the entire world is cupcakes. But wait, aren’t you gluten free? Well yes, but that doesn’t mean I can’t love them in non-edible forms too. I actually will eat cupcakes in New York when I’m there because I’m dying to try Crumbs. It will totally be worth hanging out in the bathroom later that night. I’m also going to try out babycakes since it is a gluten free bakery! I’m super pumped.
See you can have your cupcake and not eat it. This is the top of Hey Cupcake trailer in Austin on a set of coasters. I got them for my birthday. Probably one of the best gifts EVER. Other cupcake paraphernalia that I have includes a cup, an apron, and some lipgloss. I just looooove cupcakes.

6. I’m an amazing dancer. No, not professional, like ballet, tap, jazz, etc etc, but in the club I can bust a move or two. It just comes naturally to me, and I love it. It sort of makes me uncomfortable to see people that can’t dance, unless I’m really drunk because then I just don’t have a care in the world.

7. I’m an artist. Sort of? I’m not sure really, but I’ll just make the bold statement that I am. When I applied to colleges, I decided to apply to RISD and SCAD as a last minute decision. Worst idea ever? Probably because I had to turn in a 20 piece portfolio and create three new specific pieces for RISD, but I guess it was worth it. It pushed me as an artist, and I learned what going to art school would be like since I was cranking out a bajillion pieces in such a short time. I ended up getting almost a full ride at SCAD and got into RISD, but I decided that I liked to cut open things instead, so art school was not for me. Waste of time? No because it just validated my artistic skills and probably made me cockier than I need to be.

Anyways enough about me because my head is about to explode, but now its time to nominate a bunch of people in no particular order:

It’s Friday, friday, everyone is going out on Friday. No, don’t lie to us, everyone is not going out on friday. I’ll be staying inside working on a ten page anatomy review packet and a functional foods review packet. What is my life?!? I have $25 to the liquor store and I can’t even spend it yet because I have so much studying to do. Booooo. I hope ya’ll have a great weekend though and don’t hit the books too hard because then you might go insane.

Life as a Busy Bee (GF eggplant parm recipe)

Hey ya’ll! Dang, I am posting late today. I was a pretty busy bee today. I’m surprised I’m still awake and functioning.

So something exciting may be happening to me in a couple of months. I don’t want to jinx it by talking about it, but I’m so FREAKING excited that I must spread the news. There is this amazing organization out there, Taglit Birthright Israel, and they offer free trips to Israel for Jews or half-Jews around the ages of 18-22. It’s the chance of a lifetime, and I haven’t been picked yet. What is up with that Taglit? I’m like the best candidate ever. Seriously, I used to skip Hebrew school to go to starbucks with my friends instead and I never survived to conformation (10th grade). I did have a life or I just thought so when I was 13. Hey, technically I was an adult in the Jewish world, so I do what I want.


What can I say? When Jews hear the word free, we go running. I hope this doesn’t offend anyone. I just love Jewish stereotypes, they are pretty funny and mostly true. Anyways, I got an email from the birthright people to sign up for an interview for the trip (Yeah I know this is ridic, but so worth it). I am thinking this means that I have an increased chance of going because the last few times I registered I never made it to the interview part. I’m crossing my fingers because I so want to spend 10 days in Israel white water rafting, floating in the dead sea, and having escapades with sexy Israeli men. I mean DUH. Why would I not check out the locals? They are tall, dark, and handsome. Where do I sign up?

In more productive news, I literally have studied for my food systems exam for 6 hours. The material is so dry. No really, it drys out my contacts. Wow, not funny, but I pretend I am. Basically I have to memorize a bunch of facts and laws that I will need in my future as an RD, so it’s worth it, but it is so boring. Can we please go back to just making fudge and caramels, instead of actually learning something useful? (Yes, we cooked candy in lab, not nutritious, but it was to learn the “science” behind crystalline and non-crystalline candies) They can say whatever they want, I just like getting to sample it all. I have this problem. When I read a textbook for a long period of time, I start to get loopy. Uh oh the crazy is out.
I know, I’m so attractive. And I wonder why I’m single? Reading was driving me crazy, so I decided to do what I love the most. MAKE LISTS. Has anyone ever been on the listography website? You seriously can just have dashboard like page with a million lists that you make. I know I’m weird. I have become this OCD like person that must have everything written down. This led me to clean my entire apartment, which I needed to do since my friends were coming in today. Friends to the rescue. We went shopping. Being the frugal Jew that I am, I was like no spending money. Those deals. They get me everytime. I got a super cute dress from BCBG that was on sale for $29 and a skirt from express on sale for $10. I am quite the barganista. I’m a girly girl, and my friends always tease me because you will never catch me in a pair of shorts and a t-shirt. I like to look good. You never know who you could run into.
I have forgotten about the eats. This is mainly a healthy foods blog. This morning I had a dank breakfast. I decided to switch things up and make CCK’s Strawberry shortcake pancakes. While mine didn’t come out as beautiful as hers (I need to work on that), they tasted amazing. Of course I made them gluten free by using Bob Red Mills Gluten Free Flour. It was like strawberry shortcake exploded in my mouth. I paired it with three slices of Jennie-O’s turkey bacon. I love me some turkey bacon.
For lunch I decided to get a little fancy. Okay not really fancy, but hey for a college student I have some pretty great cooking skills. I was really craving something with cheese. I decided to bust out my eggplant and make some classic eggplant parmesan, but gluten-free style.

Gluten Free Eggplant Parmesan:
1/3 c. Gluten Free Bread Crumbs (I used Glutino)
1/3 c. Gluten Free All Purpose Flour (Bob Red Mills)
1/4 c. Egg Whites
1 Eggplant
1/2 c. diced tomatoes in sauce
1/3 c. shredded white cheese

1. Set up three containers with the flour in one, the crumbs in one, and the egg whites in another.
2. Slice eggplant into 1/2 in. thick slices
3. Dip slices first into the flour container, then into egg whites, and finally into the crumbs getting the slices covered well
4. Place onto a baking sheet and stick into the oven at 400 F for 20 minutes
5. When 5 minutes are left, pull out pan and pour on tomatoes and cheese, then let bake for remaining time
*I am not a big fan of tomato sauce, which is traditionally in the dish, so I used diced tomatoes and a small amount. You can replace the diced ones for as much sauce as you want

Oh dinner. Sometimes I am so exhausted that I have no effort for you. My friends ate at Johnny Rockets for dinner while we were out shopping, but since I’m gluten-free I couldn’t really eat anything there, so I just had a diet coke. OMG. I haven’t had soda in a while and it was like drinking the nectar of the gods. Okay I’m exagerrating, but only a little. I try to stay away from soda. By the time I got home, I didn’t really want to make anything, so I just popped a piece of salmon into the oven for 20 minutes and heated up some grilled asparagus I had made a day ago. I really wanted a tzatzkiki sauce to go with it, but it was sloth time for me, so it was a no go.
Yes I am that nerdy. Studying while I eat. I have no time to spare. So much info to cram in my brain. On a much brighter note, my friends want to buy artwork from me! Also my mom wants me to make more artwork to sell. Really I have no time for this, but I need money and doing art is such a good way to relax. Even if you are not really good at it, sometimes I just think its fun to doodle around. This is what made them want some:
It’s time for me to bounce. More like drag myself back to the books. I’m actually pretty impressed with myself because I have never had this much motivation in my life. I’m just really focused on getting a 4.0 because I have my eye on this dietetics internship in San Fran that I have to land when I graduate. Hope ya’ll have a fab saturday night!
